The season of winters is all about enjoying the bounty and beauty of people and socialising with your family and friends over bonfires, get-togethers and fun-filled conversations that keep you warm against the chilly winter winds. One such recipe that you can relish, especially if you are a vegetarian is Paneer Tikka Multani, a flavourful and aromatic recipe curated by the Chef Ishijyot Suri, Executive Chef, Mulk. Tender and easy to make, this delectable dish is rich in protein and calcium and is a great snack for those looking for healthier options to traditional snacks like samosas, pakodas, chilly potatoes and momos.

Ingredients -
Paneer - 250 grams

For Stuffing -
• Paneer - 50 grams
• Processed Cheese – 50 grams
• Chopped Fresh Coriander – 100 grams
• Chopped Green Chillies – 5 to 6
• Roasted Jeera Powder - 2 grams
• Salt - As per taste

For Marination -
• Ginger Garlic Paste – 15 grams
• Coriander Powder – 5 grams
• Turmeric – 2 grams
• Hung curd – 200 grams
• Processed Cheese – 50 grams
• Fresh Cream – 50 grams
• Roasted Jeera Powder – 2 grams
• Finely chopped Green Chillies – 2 to 3

Method -
• Cut the 250 grams of paneer into thick cubes and leave it aside.
• Slit the Paneer cubes at the centre to fill it with the stuffing.

For Marination -
• Mix together fresh cream and processed cheese. 
• Mix together the hung curd, ginger garlic paste, coriander powder, jeera powder, turmeric and finely chopped green chillies
• Mix the hung curd mixture & Cheese - Cream Mixture together
• Add salt to taste.

For Stuffing -
• Knead the paneer and processed cheese together 
• Add chopped coriander, green chillies, jeera powder, and salt.
• Marinate the stuffed Paneer Cubes into the marination for 3 to 4 hours.

For Cooking -
• Put on the stuffed marinated paneer cubes on to the skewers.
• Cook it into the clay oven for 5 to 8 mins till it forms a crust.

Serving Suggestion - 
• Serve hot along with green chutney and Kachumber.
